The second month of Spring — October — is always a lovely time of year in Australia.
The days are getting warmer and the parks are filled with new flowers and people enjoying the sunshine.
Here are 10 great recipe ideas involving almonds, based upon fruits and vegetables that are now at their best.
1) Bananas –> Banana Almond Smoothie
Make a delicious, filling and healthy smoothie by blending a whole peeled banana, with 1 cup milk, 1 tablespoon of honey and 12 raw almonds. Garnish with flaked almonds on top.
2-3) Strawberries and Blueberries –> Berry Almond Smoothie
Blend 10 strawberries or 14 blueberries with 5 tablespoons thick vanilla yoghurt, 14 raw almonds, and 3/4 cup milk. Garnish with crushed almonds and finely chopped strawberries.
4) Grapefruit –> Roasted Grapefruit with Cinnamon & Almonds
Halve a grapefruit and sprinkle with 3 tablespoons brown sugar, 1/2 teaspoon cinnamon and 1 tablespoon raw crushed almonds. Bake for 15 minutes at 180 degrees Celsius and serve with vanilla yoghurt for a delightful breakfast or snack.
5) Oranges –> Blood Orange, Almond & Coconut Cake or Citrus Almond Salad
Make a Blood Orange, Almond and Coconut Cake or make a warm citrus salad using baby spinach leaves, orange segments, steamed asparagus and flaked almonds. Dress with a honey balsamic vinegar dressing.
6) Passionfruit –> Passionfruit & Almond Muffins
Make passionfruit and almond muffins using almond essence and fresh passionfruit pulp. Decorate with passionfruit-infused icing and flaked almonds.
7-9) Asparagus, Green Beans and Broccoli –> Steamed Greens with Almonds
Steam asparagus, green beans or broccoli until just al dente. Toss with butter and garlic-infused olive oil, season with salt and pepper and garnish with a handful of flaked almonds.
10) Chillies –> Spicy Asian Steamed Greens with Almonds
For those that like it hot, steam asparagus, green beans or broccoli as above but dress with hot peanut oil and soy sauce that has been infused with freshly cut chillies before garnishing with flaked almonds.
